I love skewers and kabobs! It’s so easy to mix and match meats, veggies and even fruit! Skewers and kabobs add a nice variety to the same old grilled chicken breast (of course, don’t discount that chicken breast…there are some great recipes to be had for those too!)
I want food that tastes great and like I spent a lot of time on it…without…um…actually spending a lot of time on it! So, I’ve looked for recipes that help me do this. Lime and Honey Chicken Skewers is just one of those recipes.
With a quick and simple marinade and very little prep time – this may become your favorite “go to” recipe too!
Lime and Honey Chicken Skewers
Ingredients
1 tablespoon vegetable oil
2 tablespoons honey
3 tablespoons soy sauce
the juice of 1 lime
2 garlic cloves, minced
1-2 teaspoon Siracha (this adds the “kick”)
2 tablespoon cilantro
red pepper flakes, to taste (optional)
1 pound skinless, boneless chicken breasts
Instructions
1. In a small bowl, combine your ingredients, through the red pepper flakes. Mix thoroughly.
2. Pour marinade over chicken breasts and turn to coat. Cover and marinate for at least 1 hour.
3. Once the chicken has marinated an appropriate amount of time. Cut chicken into large chunks and skewer*. Some say to marinate the chicken after putting on the skewers. Either way works.
4. Grill on medium high heat for 6 to 8 minutes per side, until juices run clear.
* Important note: If you are using bamboo instead of metal skewers, make sure you soak the bamboo skewers in water for at least 5 minutes before skewering the chicken.
