Yogurt Marinated Grilled Chicken

Ok, I admit it:  I. LOVE. GREEK. YOGURT!  I love mixing it in things and making dips.  I love mixing fruit into it and making smoothies.  I just think it’s a wonderful food.  When I found this recipe using Greek Yogurt as the base for a grilled chicken marinade, I knew I had to try it.  I am so glad I did.  I think it tastes wonderful, and it’s so easy! (My two main criteria for putting a recipe on my “Go To” list!)  The only drawback (if you consider this a drawback) is that you need to marinate the chicken anywhere from 8 hours to over-night.  I hope your find, as I did, that it’s worth the effort and the wait!

 

 

Yogurt Marinated Grilled Chicken

Ingredients:

1/2 cup plain Greek yogurt or 1/2 cup plain fat-free yogurt
3 minced garlic cloves
2 tablespoons lemon juice
1 tablespoon canola oil
1 teaspoon sugar
1 teaspoon chili powder
3/4 teaspoon ground ginger (if using fresh ginger use 1 teaspoon)
1/2 teaspoon salt
1/2 teaspoon ground cumin
4 -6 boneless chicken breasts

Servings: 4-6
Directions:

To make the marinade, combine the first nine ingredients and pour them into a sealable plastic bag (the kind you feel confident won’t leak!)

Now, add the chicken to the bag, seal it and turn it (the bag) so that the yogurt mixture fully coats the chicken.

Add the chicken to the bag, seal, and turn bag to coat chicken with mixture.

A little planning is necessary with this dish since it will need to marinated for at least 8 hours, but you can marinate it over night too.  

Grill the chicken over indirect medium heat.  What this means is don’t set the chicken directly on the grill.  Use a grill pan or a grill basket.  Grill until done, about 25 minutes.

To determine if chicken is done, you can cut into it at the thickest point, going with the grain, and “eye-ball” it to make sure it isn’t pink.  However, I don’t like to do that. I prefer to use a meat thermometer and make sure that it reaches 165 degrees (per foodsafety.gov) in the middle of the thickest point.

This is a very tasty dish that I hope you will enjoy.  Add some steamed broccoli and brown rice and now it’s a meal! 🙂
